Ingredients

Taco Filling
  • 1 lb Ground Beef Opt for lean for a healthier option.
  • 1 packet Taco Seasoning Adds that signature taco flavor.
Cupcake Batter
  • 1 cup Flour All-purpose works perfectly.
  • 1 tsp Baking Powder Ensure it's fresh for optimal fluffiness.
  • 1 large Eggs Binds the ingredients together.
  • 1/2 cup Milk Whole milk will yield richer cupcakes.
  • 1/4 cup Vegetable Oil For moisture in the batter.
Toppings
  • 1 cup Cheddar Cheese Shredded cheese melts beautifully.
  • 1 cup Chopped Tomatoes Use ripe tomatoes for the best taste.
  • 1 cup Lettuce Finely shredded works best.
  • 1 medium Avocado Ripe avocados are key for smooth texture.
  • 1 cup Sour Cream Can be substituted with Greek yogurt.

Equipment

  • 1 Muffin Tin For baking the cupcakes.
  • 1 Mixing bowls For combining ingredients.
  • 1 Skillet For cooking the taco filling.

Method

  1. Preheat your oven to 350°F (175°C). This will ensure your cupcakes bake evenly and come out perfectly fluffy!
  2. In a skillet, heat 1 lb of ground turkey or chicken over medium heat. Add taco seasoning and a splash of water. Cook until browned and fully cooked.
  3. In a mixing bowl, combine 1 cup of flour, 1 tsp baking powder, and a pinch of salt. In another bowl, mix 1/2 cup of milk, 1/4 cup of vegetable oil, and 1 egg. Combine both mixtures until smooth.
  4. Line a muffin tin with cupcake liners. Pour a spoonful of batter into each liner, then add a layer of the taco filling, and top with more batter until each liner is about 2/3 full.
  5. Place the muffin tin in the preheated oven and bake for 18-20 minutes. They should be golden brown and a toothpick should come out clean!
  6. While the cupcakes cool, prepare your toppings! Chop fresh lettuce, tomatoes, and shred some cheese. Get ready to make them look fabulous!
  7. Once cooled, top each cupcake with a dollop of sour cream, sprinkle cheese, and add lettuce and tomatoes. Get creative!
  8. Gather your friends and family, serve your Taco Cupcakes, and watch them disappear! Enjoy the delicious twist on taco night!
