Step 1: Gather Your Ingredients
- Collect 200g Pancit Canton noodles, 2 eggs, 1 cup mixed vegetables (carrots, bell peppers, and peas), 2 tablespoons soy sauce, 1 tablespoon oyster sauce (or mushroom sauce for a vegetarian option), 1 tablespoon vegetable oil, and salt and pepper to taste.
Step 2: Prepare the Noodles
- Boil water in a pot and add the Pancit Canton noodles. Cook for about 3-5 minutes until tender. Drain and set aside.
Step 3: Scramble the Eggs
- In a pan, heat 1 tablespoon of vegetable oil over medium heat. Crack the eggs into the pan and scramble until fully cooked. Remove and set aside.
Step 4: Sauté the Vegetables
- In the same pan, add another tablespoon of oil. Toss in the mixed vegetables and sauté for 3-4 minutes until they are tender and vibrant.
Step 5: Combine Everything
- Add the cooked noodles to the pan with the vegetables. Pour in the soy sauce and oyster sauce. Stir well to combine all the flavors.
Step 6: Add the Eggs
- Gently fold in the scrambled eggs, mixing them with the noodles and vegetables. Season with salt and pepper to taste.
Step 7: Serve and Enjoy!
- Transfer your Pancit Canton with Egg to a serving dish. Garnish with green onions if desired. Dig in and enjoy your comforting meal!
