Step 1: Gather Your Ingredients
  1. Collect 200g Pancit Canton noodles, 2 eggs, 1 cup mixed vegetables (carrots, bell peppers, and peas), 2 tablespoons soy sauce, 1 tablespoon oyster sauce (or mushroom sauce for a vegetarian option), 1 tablespoon vegetable oil, and salt and pepper to taste.
Step 2: Prepare the Noodles
  1. Boil water in a pot and add the Pancit Canton noodles. Cook for about 3-5 minutes until tender. Drain and set aside.
Step 3: Scramble the Eggs
  1. In a pan, heat 1 tablespoon of vegetable oil over medium heat. Crack the eggs into the pan and scramble until fully cooked. Remove and set aside.
Step 4: Sauté the Vegetables
