Add the Herring: Place the Matjes fillets on one slice of buttered bread.
Top with Onion & Pickles: Layer thinly sliced red onion and pickles on top of the herring.
Garnish: Sprinkle fresh dill over the top, and season with salt and pepper.
Assemble the Sandwich: Close the sandwich with the second slice of bread, press gently, and serve.
