Preheat and Prepare the Pan:
Preheat your oven to 350°F (175°C). Grease and flour your Madeline pan, ensuring each mold is well-coated to prevent sticking. If you don’t have a Madeline pan, a mini muffin tin will work in a pinch.
Mix Wet Ingredients:
In a large mixing bowl, beat together the eggs and granulated sugar until the mixture is light and fluffy. This will take about 2-3 minutes. Add the melted butter, heavy cream, and vanilla extract, mixing until smooth.
Incorporate Dry Ingredients:
Sift the all-purpose flour, baking powder, and salt together in a separate bowl. Gradually add the dry ingredients to the wet mixture, folding gently until fully incorporated. Be careful not to overmix to keep the cookies light.
Fill the Pan and Bake:
Spoon the batter into the prepared Madeline molds, filling each cavity about 3/4 full. Bake for 15-18 minutes or until the edges of the Madelines are golden and a toothpick inserted into the center comes out clean.
Cool and Serve:
Once baked, remove the Madelines from the pan and let them cool on a wire rack. For an optional finishing touch, dust them lightly with powdered sugar. Serve with tea or enjoy as a delightful snack!
