1 cup kefir (or non-dairy kefir for dairy-free option)
1/2 cup sugar
1/2 cup unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt

Method
 

Preheat the oven to 350°F (175°C). Grease or line a 9x13-inch baking dish with parchment paper.

          Bake: Pour the batter into the prepared baking dish and spread it evenly. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
            Cool and serve: Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Frost if desired or serve plain with a dusting of powdered sugar.
