Preheat the oven to 375°F (190°C).
Season the chicken breasts with salt, pepper, and paprika.
Heat olive oil in an oven-safe skillet over medium heat, searing the chicken for 3-4 minutes on each side. Remove the chicken and set it aside.
In the same skillet, melt butter, then stir in honey mustard dressing, garlic powder, and paprika. Simmer for 2-3 minutes.
Return the chicken to the skillet, spoon the sauce over it, and top with cheddar cheese, bacon, and mushrooms (if using).
Bake for 15-20 minutes, until the chicken reaches an internal temperature of 165°F (74°C).
Garnish with fresh herbs and serve.
