Method
 

Step 1: Gather Your Ingredients
  1. Collect beef chuck roast, dried guajillo and ancho chilies, garlic, onion, cumin, oregano, bay leaves, beef broth, corn tortillas, and your favorite toppings.
Step 2: Prepare the Chilies
  1. Remove stems and seeds from the chilies. Soak them in hot water for about 15 minutes until soft.
Step 3: Blend the Sauce
  1. In a blender, combine soaked chilies, garlic, onion, cumin, oregano, and a bit of beef broth. Blend until smooth.
Step 4: Sear the Beef
  1. In a large pot, heat some oil over medium-high heat. Sear the beef on all sides until browned.
