Step 1: Gather Your Ingredients
- Collect beef chuck roast, dried guajillo and ancho chilies, garlic, onion, cumin, oregano, bay leaves, beef broth, corn tortillas, and your favorite toppings.
Step 2: Prepare the Chilies
- Remove stems and seeds from the chilies. Soak them in hot water for about 15 minutes until soft.
Step 3: Blend the Sauce
- In a blender, combine soaked chilies, garlic, onion, cumin, oregano, and a bit of beef broth. Blend until smooth.
Step 4: Sear the Beef
- In a large pot, heat some oil over medium-high heat. Sear the beef on all sides until browned.
Step 5: Cook the Beef
- Add the blended sauce, remaining beef broth, and bay leaves to the pot. Bring to a simmer, cover, and cook for about 2-3 hours until tender.

- Once cooked, remove the beef from the pot and shred it with two forks. Set aside.

- Warm the corn tortillas in a skillet. Fill each tortilla with shredded beef and top with onions, cilantro, and lime juice.
