Equipment

  • 1 large pot for boiling pasta
  • 1 separate pan for preparing the sauce

Ingredients

Pasta

  • 1 cup ditalini pasta perfect for soups and salads, its small shape holds sauces well.

Oil and Seasoning

  • 2 tablespoons olive oil adds richness and depth; use extra virgin for the best flavor.
  • 2 cloves garlic fresh is best, but minced works in a pinch.

Broth and Vegetables

  • 4 cups vegetable broth choose low-sodium for better control over salt levels.
  • 1 can diced tomatoes fresh or canned, they add acidity and sweetness.
  • 1 cup spinach adds color and nutrients; fresh is ideal.
  • 1 cup black pepper freshly cracked is the best choice.
  • 1 teaspoon red pepper flakes for a touch of heat; adjust to your spice preference.
  • 1 cup fresh basil adds a fragrant, herbal note; chop just before adding.
  • 1/2 cup Parmesan cheese freshly grated melts better than pre-grated.

Instructions

Step 1: Boil the Pasta

  • Bring a large pot of salted water to a rolling boil. Add 1 cup of ditalini pasta and cook according to package instructions until al dente. Stir occasionally to prevent sticking.

Step 2: Prepare the Sauce

  • In a separate pan, heat 2 tablespoons of olive oil over medium heat. Add 1 chopped onion and sauté until translucent. Stir in 2 minced garlic cloves and cook for another minute.

Step 3: Add Vegetables

  • Mix in 1 cup of diced bell peppers and 1 cup of chopped zucchini. Sauté until the veggies are tender, about 5-7 minutes.

Step 4: Combine Ingredients

  • Drain the cooked ditalini and add it to the vegetable mixture. Pour in 1 can of diced tomatoes (with juice) and stir well.

Step 5: Season the Dish

  • Add salt, pepper, and 1 teaspoon of Italian seasoning to taste. Mix everything together and let it simmer for 5 minutes.

Step 6: Serve and Enjoy

  • Serve hot, garnished with fresh basil or grated cheese if desired. Dig in and enjoy your delightful ditalini creation!
