2 cans (15 oz each) black beans, drained and rinsed

1 tablespoon olive oil

1 small onion, chopped

2 cloves garlic, minced

1-2 chipotle peppers in adobo sauce, finely chopped (adjust to spice preference)

1 tablespoon adobo sauce

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup vegetable broth

1 tablespoon lime juice

Fresh cilantro (for garnish, optional)

Instructions
 

Sauté the Aromatics: Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 4-5 minutes, or until softened. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Add the Spices: Stir in the chopped chipotle peppers, adobo sauce, cumin, paprika, salt, and black pepper. Cook for 1 minute to allow the flavors to blend.

      Simmer the Beans: Add the black beans and vegetable broth to the skillet. Stir everything together, bring to a simmer, and cook for 15-20 minutes, allowing the flavors to meld and the beans to heat through.

        Finish with Lime: Remove the skillet from the heat and stir in the lime juice. Taste and adjust seasonings as needed.

          Serve: Garnish with fresh cilantro if desired and serve as a side dish, topping, or filling for tacos, burritos, or bowls.
