Sauté the Aromatics: Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 4-5 minutes, or until softened. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
Add the Spices: Stir in the chopped chipotle peppers, adobo sauce, cumin, paprika, salt, and black pepper. Cook for 1 minute to allow the flavors to blend.
Simmer the Beans: Add the black beans and vegetable broth to the skillet. Stir everything together, bring to a simmer, and cook for 15-20 minutes, allowing the flavors to meld and the beans to heat through.
Finish with Lime: Remove the skillet from the heat and stir in the lime juice. Taste and adjust seasonings as needed.
Serve: Garnish with fresh cilantro if desired and serve as a side dish, topping, or filling for tacos, burritos, or bowls.
Notes
- These Chipotle Black Beans are an excellent source of plant-based protein and fiber. They are low in fat and offer a great balance of healthy carbohydrates.
- For a heartier dish, serve them with brown rice or quinoa, or add them to salads, tacos, or wraps.
- You can adjust the spiciness by adding more or less chipotle pepper, depending on your heat preference.
- Feel free to add a splash of lime juice or fresh herbs to elevate the flavor before serving.
