Preheat the Oven
- Preheat your oven to 350°F (175°C). This ensures your brookies bake evenly and come out perfectly gooey.
Prepare the Baking Pan
- Grease a 9x13 inch baking pan with non-stick spray or line it with parchment paper for easy removal.
Make the Brownie Batter
- In a medium bowl, melt 1 cup of unsalted butter. Stir in 2 cups of sugar until well combined. Add 4 large eggs, one at a time, mixing well after each addition. Then, add 1 teaspoon of vanilla extract.
Combine Dry Ingredients
- In another bowl, whisk together 1 cup of all-purpose flour, 1 cup of cocoa powder, and 1/2 teaspoon of salt. Gradually add this mixture to the wet ingredients, stirring until just combined.
Make the Cookie Dough
- In a separate bowl, cream together 1/2 cup of softened butter and 1 cup of brown sugar. Add 1 large egg and 1 teaspoon of vanilla extract, mixing until smooth. Gradually add 1 1/2 cups of all-purpose flour, 1/2 teaspoon of baking soda, and a pinch of salt. Stir in 1 cup of chocolate chips.
Layer the Batters
- Pour half of the brownie batter into the prepared pan, spreading it evenly. Then, drop spoonfuls of the cookie dough over the brownie layer. Finally, pour the remaining brownie batter on top, spreading it gently.
Bake the Brookies
- Bake in the preheated oven for 25-30 minutes. The edges should look set, but the center will still be soft and fudgy.
Cool and Serve
