  • 1 can Coconut Milk Use full-fat for a richer sauce.
  • 2 tbsp Lime Juice Fresh lime is best.

Method
 

Step 1: Gather Your Ingredients
  1. Collect chicken pieces, curry powder, garlic, ginger, onion, bell pepper, thyme, scallions, coconut milk, and chicken broth.
Step 2: Marinate the Chicken
  1. In a bowl, mix chicken with curry powder, minced garlic, and grated ginger. Let it marinate for at least 30 minutes.
Step 3: Sauté the Aromatics
  1. In a large pot, heat oil over medium heat. Add chopped onions, bell peppers, and sauté until soft and fragrant.
Step 4: Brown the Chicken
  1. Add the marinated chicken to the pot. Cook until browned on all sides, about 5-7 minutes.
